add unit tests for oidc.IntrospectionResponse

- Changed UserInfoAddress to pointer in UserInfo and
IntrospectionResponse.
This was needed to make omitempty work correctly.

- Copy or merge maps in IntrospectionResponse GetUserInfo
and SetUserInfo
